I have a friend who wants me to make 30 lbs of Brats next month.  She wants to buy all the ingredients, but prefers to buy a mix.  Any suggestions?  I've never bought a mix...but see Sausage Maker has one...anyone try that? Help!!! Thank you!

I've never tried the one from sausage maker. Penzey's Bratwurst Sausage Seasoning is what I use for my Brats, and I don't bother to mix my own seasoning for this sausage any more. I don't smoke my brats, I prefer them as fresh sausage, and I don't add the MSG as they suggest. I've never kept track of how many pounds of sausage a 1 lb. bag of mix makes, but you can send them an email.

The only issue I have with it is that I can't adjust the salt. The amount of salt is about the same as most sausage recipes, but for the past 4 or 5 years I have been reducing the salt in my sausage recipes. Even though I'm reducing my salt, I can't seem to stop using this sausage seasoning. :)

I use the Wisconsin Brat seasoning that they have at Dupey Equipment. Give them a call for pricing

I use High mountain from Cabala's. It does 25# of brats and get great reviews from it. It also comes with casings and I've gotten as many as 95 brats when all was done. I like it and it's easy for me get. Good luck with what ever you chose .
