Candied pineapple

I peeled and cut up three pineapples, and put them in a pot with 3 cups of water and 6 cups of sugar. I dissolved the sugar in the water before putting in the pineapple


Bring to a boil, reduce to med-low, cook until the pineapple is translucent, about an hour or 2.



into the dehydrator at 120F for 24 hours, then check..

stay tuned


After it cools, mix the left over liquid 2:1 with rum and pour over ice.

After almost 3 days in the dehydrator:


shake in some 10x powdered sugar



Good stuff. chewy. almost like pineapple jerky.

Man that sure looks good, I love pineapple and take sliced pineapple, from the can, and dehydrate it as is. Its real good but you took it even further.  :)

Looks great, I have a boat load of Bannanas to do in the dehydrator.

Edit: I have been saving ripe Bannas in the freezer for six months. I saw this post and took them out to dehydrate them. Don't try this as they turn to Mush when they thaw out. Now back to your regular scheduled show  :)

Quick someone call 911, I have slipped into a sugar induced coma. Man that sounds good. Just a side note. Yesterday I hauled a 40' reefer container load of pineapple out to a compost farm in the valley. The reefer unit had seized on the shipped and it spent 8 days with no power. It was quite pungent when we opened the doors. What a waste.
I like to walk threw life on the path of least resistance. But sometimes the path needs a good kick in the ass.

Im thinking when you mix with rum and pour over ice you mean to drink it? Have you ever tried using some rum in your boil? Or is it added after 24 hours Im confused. Looks great ! Is the powdered sugar because of stickiness?

Yes, drink it.

What you have in the pot when you take out the pineapple is pineapple flavored simple syrup.

Using it as a mixer is a lot better than throwing it out. add some coconut cream and some ice with the rum, take for a spin in the blender and you have a pina colada.

Thats what I do when I need instant ripe bananas for my banana bread, only takes an hr.  ;D
