Uncover and Chill Overnight

Many recipes say to let a smoked product cool down and then refrigerate "Uncovered and Chill Overnight".  Not everyone in the family enjoys the smell of smoke in the fridge.  What happens if the smoked product is covered instead?  Does that affect the quality?

Tell those to move out,.....simple solution. Just kidding. The smell will not be that strong that it should impack on the person opening the fridge. If it does than there is something wrong with that person if you ask me.

I personally do not leave anything smoked/cooked uncovered in the fridge.  I always cover everything or use ziplock bags.  Have found that a smoked product seems to always taste better the next day or so once everything has had time to stabilize and permeate.  For example:  smoked salmon is better vacuum sealed and frozen for a period of time  :)

Ditto.  First night in the fridge in freezer ziplock bags, then slice/cut/whatever & vacuum seal the next night.

You generally will see those instructions prior to smoking to help the meat develop a pellicle, but I don't recall seeing those instructions after the food has been smoked. I alway tightly cover smoked foods, or you will find the smell will permeate other foods in the refrigerator.
