I needed pepperoni for my pizza so I thought I would cheat and make oven broiled pepperoni.Got the stuff together.

The recipe is from the Morton Salt company

Pepperoni
Directions

Preparations:
Combine all ingredients, mixing until thoroughly blended. Divide mixture in half. Shape each half into slender roll about 1-1/2 inch in diameter. Wrap in plastic or foil. Refrigerate overnight. Unwrap rolls and place on broiler pan.

Cooking:
Bake at 325°F until a meat thermometer inserted in the center of a roll reads 160°F, 50 to 60 minutes. Store wrapped in refrigerator. Use within 3 to 5 days or freeze for later use. If Morton Meat Curing products are not available at your local grocery store, the products can be ordered throught the Morton Salt online store

Ingredients
1 pound lean ground beef
1-1/2 level teaspoons Morton® Tender Quick® mix or Morton® Sugar Cure® (plain)
1 teaspoon liquid smoke
3/4 teaspoon freshly ground black pepper
1/2 teaspoon mustard seed
1/2 teaspoon fennel seed, slightly crushed
1/4 teaspoon crushed red pepper
1/4 teaspoon anise seed
1/4 teaspoon garlic powder

All rolled up ready for the oven

Out and cooling down.I cut it up and put it on the pizza.I use a pizza stone for better taste on the crust.

The money shot.I'm aloud only 2 pieces a week,but it's worth it LOL

Looks awesome and you're in luck ....... today is Friday and next week starts in 2 days, so you can have 2 more pieces on Sunday. ;D

So are you gonna share the recipe for the pizza or just leave us drooling? LOL

This is a low fat pizza. I use Danny's premade NO fat 12" crust. Your favourite pizza sauce.
              I use a handful of-Fresh sliced onions and mushrooms.A few pickled banana peppers. Hot Italian sausage.I remove the casing,
fry and breake up sausage in pan.when cooked,I drain off the grease,put meat into colindar and under hot water wash the sausage to
get as much grease out as you can.The sausage is the sprinkled over the pizza along with some crumbled pepperoni.Shred a 1/2 cup
low fat cheese and sprinkle over the top.Place pizza in oven and cook till done.WASHING THE SAUSAGE HAS NO EFFECT ON THE TASTE. :)Enjoy

You can make your own Morton Tender Quick, and save money; if you can purchases Cure #1. In Canada Sure Cure would be more commonly found and is the same as cure #1

I was lucky enough to get a couple of pounds from Windsor Salt here in Nova Scotia,2yrs ago.Don't think you can get any more.
