Overnight Smoking

I am new to smoking with a Bradley.  The manual says I have to empty and refill the water bowl every 2-3 hours.  How can I do this if I want to smoke a butt overnight.  I really don't feel like like setting my alarm every 3 hours to check on my smoker.

I don't do overnight smokes.  Having said that, you could use an aluminum foil roasting pan instead of the water bowl and have enough water to get you through the night.

Thanks Ka.  Let me ask you this.  If I was to spend a Sunday(Of course during12 a Green Bay Packer game) smoking.  How long would it take to smoke 2 10lbs butts at 190 degrees.  I was thinking about hours.

I have had 2 8lb butts at 225* take anywhere from 18-23 hrs.
When I do overnight cooks I usually start somewhere around 7:00-8:00pm. I use an aluminum foil pan. I smoke for 4 hrs. After the 4 hrs I change the water and go to bed. I get up around 7 am and check things out. I use a maverick 732 thermometer and set the high temp alarm.

Is that the internal meat temp you're aiming for or the cooking chamber temp?  That's a bit low if it's the cooking chamber.  220-225 is what most people use.

The general rule is it takes 1.5-2 hours per lb for a pork butt to cook.  With two of them at once it'll probably be closer to the 2 hour mark, especially if you just have one 500w element.

On overnight smokes, I replaced the small water bowl with a 9x13 disposable aluminum baking pan.  I change the water after the smoking part is done but after that I don't need to refill it.  I have a Maverick ET-732 and I set the high temp alarm at 230*F to warn me of a grease fire and the low temp warning at 150*F to warn me if the elements fail.  I set the receiver on my nightstand and it'll wake me if anything happens during the night.

you can always smoke and then put it in your oven for the overnight portion. Just make sure you have a pan under it to catch the drippings ;D

My friend GR beat me to it.  After the smoking period I place the butts on a roasting rack and into a roasting pan so that the butts are not sitting directly on the bottom of the pan.  You can foil or not foil.  I don't foil as I think foiling the butts inhibits the formation of a pronounced bark on a butt.

Orange - You now know everything you need to know.  Smoke for 4 hours in the Bradley then finish in the oven.  Go to 200o IT.  Use a drip pan.  The only thing I might add is that when I do two butts that way, I often finish one in the oven (for the bark) and one in the crockpot (for the juice/drippings), then mix when pulling.

When i do long smokes i stay up with it. I never sleep while smoking. Ditto with Gus & Ky....Your in for a long smoke.
