When doing summer sausage how long does it normally take for the sausages internal temp to reach 153 degrees I am using a digital thermometer inserted into the sausage

It could be from 6 to 12 hr

It all depends on the size of the sausage and how many ya got in the smoker

The main thing to go by is the IT (Internal Temp) of the sausage NOT the time

A little more info would help to dial in your approximate cook time
