Another Turkey Question

Hello everybody, I got a couple quick questions. My family has put me in charge of smoking the thanksgiving turkey. I am planning on getting a whole turkey to smoke and deep fry. If the turkey has been enhanced i don't plan on brining it. Planning on smoking it for about three hours at 225 and then deep frying it. Any ideas on rub? Should i inject it cerola butter before i smoke it or before deep frying? We are eating at 1 so i was planning on starting it at about 7am. Does this seem like a good plan? Thank you in advance

Inject and rub the night before, I am using Jan's rub this year.  How big is the turkey? I don't think it will take 6 hours.  Here is a link to one I did last year, I smoked than finished in SRG.  Same idea as smoking and finishing in peanut oil.  That one took 4 hours and 10 minutes.
