Thanks all.

Been at my "one weekend a month" duty so haven't been online much. 

Making candy is very much like the curing and smoking.  Very scientific, very precise but with the right equipment anyone can do it  The new flavors this year were the Green Fairy (absinthe) and the peaches and cream.  The peaches and cream probably won't survive as the flavor is weak (I don't do subtle) but the Green Fairy was much better than I thought and people are very surprise at how good it tastes.  Granted absinthe is BLOODY EXPENSIVE!!!!
