Apple injected smoked pork loin

Didnt really have any prep time,  Just kind of threw together a few things at the last minute but luckily it turned out awesome.

I just thawed out a pork loin,  Didnt have any time to really season it and let it sit.  Did everything about 10 minutes before throwing it in the smoker.  I coated the entire outside of the pork loin with olive oil,  and then covered it in a mixture of Garlic Powder, Sportsmans Warehouse Rib Rub, Kick Ass Honey Chipolte rib rub, and Gun Powder seasoning. Decided at the last minute to inject the loin with apple juice.  Started to look and smell pretty good




Was going through the cupboard wondering what else would be good,  Saw the wife had a package of brown sugar sitting there,  so I decided hey,  what the heck.  After rubbing it all over the loin,  it created kind of a glaze on the loin.  Then  decided to add a little more just to top it off in the smoker.


I ended up cooking it at about 225 degrees for about 2.5 hours until IT was around 155.  Let rest for about 20 mins,  Used apple pucks and filled the water dish with the rest of the bottle of apple juice.



Turned out pretty dang good if I must say so myself.  Wife sure didnt complain.  The glaze was actually really spicy,  but you could definately taste the sweet of the brown sugar.

I tend to do alot of these last minute dinners,  havent had one turn out bad yet.  Maybe I need to start writing down a few of my recipe's so I can remember for next time.  Lol
