Another Wedding BBQ / Crawfish boil

Had another cowboy wedding to do this weekend. The Ranch was gorgeous. Weather was perfect 70-80 degrees. I am amazed how many people hire me to do weddings knowing i provide to of the messiest things to eat. This menu was 16 racks of ribs, 6 pork butts, dirty rice, beans, coleslaw, corn, potatoes, 30lb boiled crawfish,corn bread , mac and cheese. The rear smoker is under construction, we have been welding and modifying it. it should be ready and painted this month. It is an old light generator box.

We haven't had a good mud-bug boil since we left Biloxi.  That is one of the things we miss (but don't miss the hurricanes).

Maybe so, but I bet I can go through 10 - 20 pounds of shrimp faster!  :-)   Ya know, dem bugs is messy and I got to keep up appearances!
