Those look perfect and I can't believe you can do all that in ONE day. If I do a 10lb batch I think it was a busy day. Best be keeping my mouth shut. :-X

I have a printout of one of your earlier posts with your recipe and smoke / cook / bath recommendations and still use that. Great stuff.

Mike has a few time savers. Here is an example of the time the mixer will save. This is a 30 pound batch in around 45 seconds to a minute.

Mike also has a large stuffer that can crank out some serious sausage.
Nice, do you have any more information on the mixer you were using?

Holy Smokes Batman I think we found the sausage factory!!!!

Looks great and I bet even taste better.

I can barely get through 25 lbs in a day.  My wife would kill me if I tired to do more.

Did you build your own smoke house or are you using a large commercial smoker?????  This is obviously more than a hobby!
The sausage is hanging and the butt is brining
1 Bradley BTDS 6 rack
1 Sausage Maker Propane 6 rack
1 Char Broil off-Set smoker
1 La Caja China #2 Roasting box
1 Lynx 42 inch BBQ

Hi Big_George

I have a 220v smoker I built that is inside my heated garage. It will hold up to 100 lbs but I typically put it through in 50 lb batches.

It is 100 % hobby, although I do a far bit for family and friends.

Mike,
You are truly an asset to the forum.  It is nice to see you put the products to use that you have designed and helped others design.  Great looking batch of sausage.

Another great batch Mike!
