Knackwurst & Kielbasa

This past week (Tuesday) I made two kinds of sausage (from Len Poli's site):

Kielbasa - Fresh Polish-style Sausage

They were good and I grill two of these on the grill.  Had a good flavor (sort of reminded me of bratwurst).  Used hog casings.  Offset some of the meat with pig fat, since my pork is on the lean side.

Sonoma Knackwurst

These were different than what I was expecting.   Not sure what it was (Mace?  Ginger? combination of spices?), but something in them was not too much to my liking.  I did do a taste test (fried a small sample)  before stuffing, but didn't notice anything.   Also, got to work more on my emulsion, maybe get a small grinder blade?
   Grill two of these on the grill.  My wife says we will eat them, too much time and money in them.

On both of them, should has stuffed them a little more, but after my last batch and all the blow outs, I was cautious.   But the knackwurst did give me an idea for another day.

They look great! Nice color.

I've made this recipe (Poli) before and wasnt crazy about it. Nice part is you can adjust the next batch to your own tastes.

I use a 3.0mm plate for a 2nd grind.
