What is a baby back spare rib?



I got the country style spare ribs thinking they were regular ol spare ribs last time and didn't like them.  Now I'd like to get some baby backs but don't want any surprises.

I haven't seen that before, we have country style pork ribs that are closer to the shoulder or butt end and our baby backs are the short less meaty end of the spare ribs and the spare ribs are the more meaty full rib like you see in a BBQ joint in Texas. You might need a different butcher.... I'm sure the more experienced on here can better explain it with pictures and correct any mistakes I have made.

I've never heard of baby back spare ribs, nor country style spare ribs. They are generally called baby back ribs, and country style ribs. Baby backs are cut from the loin (upper back). They are leaner, more tender and cook faster then spare ribs. Many prefer them over spare ribs. Spare ribs come from the side of the pig; just below the baby backs. They have more fat, more flavorful, but are tougher and require a longer cooking time. My preference is spare ribs.

As lot of stores take liberties in renaming cuts, what they are calling baby back spare ribs, may be St. Louis style spare ribs, which are spare ribs and after trimming, look similar to baby backs. I would ask the meat cutter where they are cut from, but at $3.99/lb, they better be baby backs. :)

I fully agree with Habs, I just bought baby backs for $2.88 a lb. No such thing as baby back spare ribs.
If that is true prime filet mignon, I would stock up. They cost me $20.00 a lb here in Ms.

Yeah it is.  We stocked up last time they were on sale.  These filets are incredible.  My mother in law bought me some for Father's Day.  What a great gift!

Anyway, I appreciate the info.  I'll swing by tomorrow and see what they look like.
