Adding racks

Hi All

I have a 6 rack digital unit and I just got an extra 4 racks from Canadian Tire for 19.99.  I was wondering what the implications/consequences are if I add these 4 racks (inverted) to do jerky??  (this would give me a total of 10 racks)

Will  the process time change or are there any other things to consider?

several people invert racks  as you  are indicating to  do jerky and other items with very little problems, also when using a pair of racks  one  inverted as a pair lay the meat in  one direction on the bottom  rack with a  little space between the  pieces and 90 degrees  on the very  next rack so you have  flow through the meat ,, repeat as necessary for all of your jerky or meat...

I (as have many) converted my 6 rack to a twelve rack by adding additional rack holders in between the existing one. Basically it is just aluminum angle cut to size and screwed in the cabinet.

Did adding 6 racks have any effect on the cooking times or the smoke distribution?

Actually it gives you more flexibility. I have the dual element mod so temps aren't really an issue.
If you layered it with jerky such that there isn't any space for the heat to get thru, yes it will effect the heat patterns.

I use 4 inverted racks with the 6 normal (10 total) and rotate racks every hour or so when making jerky and can not really tell any difference from using only 6....I like the added capacity
