Rocket, welcome to an outstanding forum, which is the home of literally dozens of really helpful smoking, sausage making, and smoker experts.

Ditto to Snoopy's recommendation to check out the Our Time Tested and Proven Recipes forum at www.susanminor.org.  This forum is much more than a compilation of recipes.  The recipe developers have often added comments, tips, and things they learned as they prepared the recipe time after time.  Lots of fun, interesting reading.  Of course, the reading leads to many a meal where you let out your belt a notch or two.
