I mix it and stuff and smoke no need to let stuff Fridge for 12 hrs.

Just one more question I promise! :-\
How long do you do a ice bath for?
I've never seen or done a ice bath so I'm assuming you just submerge the SS in ice water for a certain period of time?

All you want to do with the ice bath is stop the IT from going up past the 152 degree temp. Meat with keep cooking after you bring it out of the oven and you risk fatting out. Leave them in there a good twenty min. and that should be good.

I usually keep it in until the IT hits around 90f then dry it off and hang it back in the fridge to bloom more overnight. Then have at it!  ;D
