Italian Smoked Sausage

Hello fellow sausage makers.  I'm new, just signed up, been making sausage for about 2 years now.  Just ordered one of Kirby's mixers and he told me about this forum.  I am looking for a Smoked Italian Sausage recipe.  Looking for a mild/hot, not crazy hot, recipe that the whole family could eat.  Not too interested in a sweet recipe.  I have enjoyed looking at all the posts and really enjoy the pictures.  Thanks!
