My moms working today and the rest of the family had plans today so were doing our family Thanksgiving dinner on Saturday instead. I have done a test turkey last week with four hours of apple and it turned out awesome. Would hickory be good? I'm thinking of mixing apple and hickory for four hours for my two twelve pound turkeys in my BDS

The first turkey I did, I followed the "Smoked Thanksgiving Turkey" recipe from the Bradley recipe site.  It called for 2 - 4 hrs smoke using pecan pucks.  We liked it so much, I haven't tried anything else.

For me I always use Hickory, not because it tastes different but I just can't tell the difference from one would to the other. The only thing I can tell is just how strong the smoke is. So with using one wood (hickory) I can tell how long I want to smoke the meat. Most times it about a 4 hour smoke. If its cheese I just go 1 hour and thats plenty. Jerky and sausage I go 6-7 hours. One wood different times.
