Rib Rub recipe

I wanted to share a recipe I got from a friend a few years ago.  I have used this many times on ribs, pork steaks, and chops.  (Personally, I like more "kick" in a rub, such as I get using Jan's rub, but my wife really likes this recipe.)  It's good for a change of pace, and it does have nice flavor, and produces a great bark.

Smokin' Ribs - Rib Rub

4 cups of white sugar  (I usually cut this down to 3 when the wife isn't looking!)
1 tsp. ginger
1 tsp. allspice
1 tsp. cayenne pepper
1 tsp. paprika
1 tsp. meat tenderizer
2 tbsp. onion powder
2 tbsp. garlic powder
2 tbsp. black pepper

Mix seasonings well in pan or bowl.  Rinse 2 slabs of ribs and pat dry with paper towels.  Coat well with seasoning mixture.

I usually coat them, and marinate for at least 8 hours, but most times overnight works best.  Smoke with your favorite wood flavor.

That's a pretty good looking rub, I'll file this one away.  So many rub recipes, I think one could spend a lifetime tweaking and perfecting.
