Romanian Mititei Sausages (No Casing Needed)

Left the Sausage Vault open too long putting in new secret receipts and this one fell out!

2 pounds ground chuck
2 tablespoons olive oil
2 tablespoons water
3 finely chopped garlic cloves
1/2 teaspoon thyme
1/2 teaspoon hot red pepper
1/2 teaspoon hot Hungarian paprika
2 teaspoons caraway seeds
2 teaspoons salt
1 teaspoon freshly ground black pepper

Place all ingredients in a large bowl and mix thoroughly.  Wetting hands often to keep meat moist. Cover and place in fridge for 6 hours or overnight.

Using slightly dampened hands form into 18 equal portions. Then form into oval sausages 3 inches long x 1 1/2 inches thick. Grill, broil, pan fry 7 minutes per side or bake @ 350 for 15 minutes.

Serve with tomato and green onion salad, sour cream sprinkled with paprika,  baked potato or french fries, or rice

Mititei make great appetizers and are wonderful cold the next day in a sandwich

Thanks for posting, Chris.  I just happen to have all of the necessary ingredients and nothing to do today.  The cheese frig is full.   :( :(

Thats the Irish side there's some Italian in there. Not to mention some Chech. Since it has been such balmy weather. I have been doing some research!! There may be some new sausage formulations showing up once it thaws out around here!!

If that vault stays open to long I'm going to need a bank loan to buy all the meat I'll be using soon. :)

You'd need to add a walk-in cooler and freezer to your little building if you got into the Sausage Vaults that Nepas and I have!

I think I'd need a sausage factory and storefront if I spent any time in those two vaults for sure, of course I'd have to come stay and apprentice for awhile to be able to make most of them.
