A bit of bacon

Here guys and girls, a little bit of bacon making from across the pond. Cured for 14 days and smoked for 2.30 hrs with  Maple.

That is great looking bacon!  That cut of pork sure makes some lean bacon.

Thanks for the compliments. It certainly helped with the slicing when a friend offered up an Ital commercial slicer. Couldn't let that pass by.

They look great, that's a lot of bacon buttys!  I've got some more in the smoker right now, can't beat this stuff.

That is some beautiful pig belly you got there, you'll never buy it at a store again and I bet you find yourself grading restaurant bacon in the future. ;D

I guess a lot of what we enjoy doing with our bradleys is down to having the confidence to trust our instincts.
When i started i was so nervous about whether i was doing things right and if the end result was going to be worth the effort.
Trust me, with the help and guidance offered here the rest is easy.
This batch of Bacon sure does show to me that anyone can produce a fine end product if you follow the basics that are available here.
Dont be afraid to try your own take on someone elses recipe as long as you stick to the fundamentals when curing.
All in all smoking anything now is an enjoyment and although i still think i am learning, i also feel i have the confidence to deviate a little and try a few things different.
With the end of winter fast approaching the time is coming when we will all get outside a bit more and hopefully enjoy the fruits from our Bradleys.
