Habanero's grilled smoked cheese sandwich

Nothing fancy, I just wanted to give a shout out to how smoked cheese makes a fabulous grilled cheese sandwich, first time I tried them.  I used grated, smoked sharp cheddar, topped with tomatoes, added some dijon mustard and a sprinkle of Italian seasoning.  Good stuff.

I feel that grating the cheese is the key for a better grilled cheese sandwich. With the Italian seasoning, your combination sounds great.
