Letting sausage sit before smoking

What would happen if I only let the sausage sit for say an hour or so before smoking?
I no it's best it let sit 24hrs but I got myself in kind if a pinch?

I have stuffed and smoked the same day many times. It will be just fine.

Jus going a members recipe for hotdogs and it says 1/4 mil (skim). So that's a 1/4 cum skim milk powder?
