Shriveled vs. Solid Snack Sticks

First off, hello Ya'll. Been a long time since I have been here (new house, new baby, and all that stuff) so I've been pretty busy. I hope all is well. I am looking at getting back into this stuff (the best I can at least) have 8 hind deer quarters I have to make into jerky next week for some friends, however I was wondering if anyone knew about the differences in snack sticks, can be either beer of venison. When I do my snack sticks they always come out shriveled, however I have had some snack sticks from some local butchers and theirs come out pretty much the same size and shape as when they were stuffed (and sometimes they have a stronger smokey taste to them)

Does anyone know how these happen this way? Only way I can think is that they are stuffed, smoked for a few hours and then put into a hot bath. I may be wrong but can use some insight.

It seems when I add NFDM to mine they get more plump. I used to use soy protein concentrate and they were ok but I liked the NFDM better. I used 1.20 of nfdm to 3 lb of sticks. I would not say this is the correct amount it justed worked for the batch I made.
I have only made it once so I would wait until someone with more knowledge comes by.

The powdered milk will help but its hard to say exactly why they are coming out like that. Does the mix need more water? Are the sticks getting too warm? Are the sticks getting hot too fast? Fat out? There can be a number of reasons.

my sticks are not fattening out or even drying out and theyre not getting too hot too fast. They basically look like everyone else's sticks on here (and i like them) however I didn't know if anyone had experience with their sticks basically not shriveling up. I wish I had a picture of it to show everyone, they still have snap, but basically the case and the inside is almost the same shape and form as it had after being stuffed.

Putting thEm in a ice bath right out of the smoker will prevent shrivelling
