What are you using to measure the cabinet temperature? For a lot of us, we found the door thermometer inaccurate. If you are using a thermometer probe; have you checked to see if it is accurate?

Good idea, but I am using a digital thermometer. I've heard alot of people say that their box thermometer is off, but mine has always been right on with my digitals.

Thanks for the ideas though. BTW the brisket turned out pretty good. I've been taking the last few to an internal temp of 205-210 and I'm much happier with the texture compaired to 190 and then ftc.

In conclusion...replacing the high limit cut-off switch fixed the problem.
