upset with my first smoke

I had my first smoke :-[  I am a fireman and we have a certain gentleman on my shift that likes to pull every spice out of the cabinet, mix it up and put it on whatever we are eating that night.  We smoked chicken quarters with some kind of conglomeration of spices.  It pretty much ruined the smoke flavor.  There were only a couple of bites you could taste the smoke flavor.  We used Hickory.  But, I got over it and smoked a pork loin roast that I got off the website other than tweaking the recipe due to me not understanding it, it really turned out great!!! Everybody at the station was very impressed.  Just don't think anybody will buy a Bradley cuz they think its was ludacris on how much I spent.  Oh well, can't put a price on smoked foods! ;D  I recently put a post out confused about recipe, if you could check it out and please give me some feedback on understanding the recipe.  Until then, keep smokin!!!!!!!!

I would stop providing them with smoked food, then watch how fast they will go out and purchase their own Bradley ;D

Put the not-so-good experiments in 'C' Shift's reefer, SF....they'll eat ANYTHING! Then, stick to the tested and proven recipes on or via this forum, until you're comfortable launching out on your own...which should be about one week or less at the rate you're going already! ;) :D  Hope to be seeing some of your future successes posted herein!

We have a recipe site if you have not yet found it. The items there are time tested and proven. If you find a recipe that you want to try and are a little lost about it then post here on this site and copy the link of the recipe and past it here so we can see which one it is and help you with it.

Hello, I'm a newbie too(4 smokes and counting). did 1/2 chicken to start with Memphis rub. They turned out great. Have tried baby backs x2 (one with Memphis rub and the other Apple City Ribs from the Smoke & Spice cookbook) Turned out great also(ribs about twice a year is plenty for me). Smoked some corn also(also very tasty). Going to smoke some portabello mushrooms and onions tonight(have to let hubby grill the pork chops or he'll sulk).

Try Olds website, good advice + the recipes. The Smoke&Spice cookbook has been a good buy.

My neighbors think I am nuts too, but they thought that before I bought the Bradley.  ;)
