chuckycheese

Just a quick intro, bought my first charcoal/wood smoker last year and 2 weeks ago I purchased a Bradley 4 rack digital smoker.

I enjoy beef and pork ribs, have yet to try any thing else. Maybe I am afraid of ruining a 25$ shoulder, butt or hock.

I joined to learn and mingle, I am a disabled veteran so I can no longer maintain employment but try to stay as active as possible.

hello and welcome aboard

lots of good people and information, pork is one of the easier meats to smoke, if you  have a  rub that you like  use it and smoke the meat for no longer then  3 hours, misquite and hickory are very strong woods... typically require less smoke time then other  woods.. box temp should be at 225 F or so.

if you are having a larger load of meat placed in the box, the temp of the box will drop and take a long  while to recover,,, this is normal dont  worry about it... your meat is still cooking. It is also normal for a 10 lb piece of meat to take 10 to 18 hours to cook depending on how you  like it  cooked,,, I.E. medium, well,  longer in some cases if going to use it  for  pulled meat...

Habanero Smoker

Hi Chuckycheese;

Thank you for your service, and welcome to the forum.

You will find the cook times longer when cooking in the Bradley compared to your charcoal/wood burner. As mentioned ask questions when you are unsure.

The below link also contains a wealth of information.
