Peameal Bacon Recipe

I have some leftover pork loin and was just wondering if anyone had a recipe for Peameal Bacon.

Pea meal is just cured pork loin that has been rolled in either coarsely ground pea meal, or coarsely ground corn meal, and not smoke or cooked; but if you want to smoke/cook it you could. After the loin is fully cured, and rinsed; allow it to air dry 15 - 20 minutes. The roll it in the coarse pea meal or corn meal, until it is well covered. Wrap tightly in plastic wrap and refrigerate overnight - if you are going to smoke/cook it do it after this step. At this point I slice it as I need it, and pan fry it. Often I will dip the sliced in beaten egg, then dip the slice in corn meal before frying.
