new here, interested in cold and hot smoking

Hi,

I've had my Bradley Digital Smoker (6 rack) for a few years, and have happily been hot smoking salmon.

Recently, I did a pork butt following some advice here (e.g., 205 degrees, ATC) ... wow, falling off the bone!

Now working on cold smoking salmon.
