Beef Roast

This past weekend I smoked a 3lb eye round roast. Basic rub,smoked @ 200F for approx. 4 hrs. with hickory. Smoked until internal temp was 140F which is medium rare for beef. Did the whole towel thing for 2 hrs. then refrigerated overnight. Next day sliced it paper thin for sandwhiches on my new Deni slicer. You just can't buy lunchmeat this good![:p] Then vacuume sealed some for later. What a fun weekend![:D][:p][;)]
