Ground Venison Bacon Wrapped Biggies

Have some ground venison bacon wrapped biggies in today. Going with some maple smoke.  ;D

My neighbor went with a wireless modem and my smoker cam is acting fritzy :o I guess i need to hard wire it now. :-\

Oh man, them look good.I never thought of making something like that.What alls in it besides bacon and deer?

I toasted some corriander seeds in my small iron skillit. While that was going on i reground the venison through the small plate with some smoked bacon and 1/4 cup bread crumbs (non seasoned). After grinding i ground the seeds (1.5 tblsp) mixed into meat with salt/pepper and my own homemade dry consisting of thyme, oregano, cayenne, garlic powder, ginger, smoked paprika. Mixed everything together smoked for 3 hrs @ 170* with maple and below is what i got.  ;D

Very  8) I'm gonna try this and practice it a few times and whip it on the gang at deer camp this fall. :)
