Sausage

Thanks for all of the replies! I made mostly venison and 15lbs of beef sausage, for the most part it has turned out great. I've always cold showered, most of the time in a cooler with ice and water. I try to make my casings as full as possible. I guess it just must be because I take 99% of the fat out that they rinkle. I will keep trying to make that perfect stick! I'll try to post some pictures later.
