Aluminum Foil

    Ok stupid here  ???  I read somewhere that it was said not to use aluminum foil in the Bradley, Is there a reason? It should help on cleaning up quiet nicely unless the smoke can't get all around the meat, Or about about half way through the smoke you flip the meat? You could poke a few holes in it to let the juice go through to the pan ???

This was addressed when I started.  The biggest factors are adequate smoke getting to the beasts, and stopping fat drippings from going down to the v-pan (or covering up the holes in the v-pan) thereby possibly leading to a grease fire.  Some do use foil, just need to be careful.  I do not myself (no need for it).  The ones that do are usually doing meatloaf or nuts.  I have a meatloaf basket made of stainless.

I think another concern with foil, is that if it were completely covering one or more of the racks, a heat build up would form below those racks as it can't escape properly. This could be a very dangerous situation, especially if the BS wasn't tended at regular intervals.

I wouldn't foil anything for smoking, bit pointless as the smoke wouldn't get into the food, only for cooking/heating food.

In the past i have foiled a few single racks of ribs, and put them in the BS for their last hour or so of cook time, there weren't any problems, in fact it worked quite well as there was plenty of room for heat to circulate.

I haven't used foil for a while now though, same as Wildcat i don't have the need, usually with me if anything needs foiling, it goes into the house oven.

i used aluminum foil in the bradley once and my hair fell out... but my reception was outstanding...

I recently purchased a Brinkman Professional Charcoal Grill for finishing off chicken wings, ribs, etc.  Brinkman's website under accessories listed the basket.  Really nice basket IMO.
