I just received a new SS smoker for my birthday and plan on trying it this weekend with a couple of chickens.  Does anyone have a recommended recipe?  The "Chicken on a Throne"  sounds good, but can't find the recipe.

Thanks for your help.

I found a couple great recipes...read a lot on this site about people having "angst" about the skin on a smoked chicken not being crispy. we smoke the chicken with hickory for about 45 minutes then move it to the rotissere. Amazing! OR....you can cut the chicken up...soak it in buttermilk for a few hours...put it in the smoker for about 45 minutes...take it out...put it back in the buttermilk soak...flour it and fry it in Crisco (I know...the dreaded Crisco) but if you get it to the right temp the chicken won"t soak up the oil. Really good "smoked fried chicken"!

Dave,
Beer can chicken is easy.  1/3 can of beer (add a couple of extra holes on the top) and add any spices you want to it.

As La Quinta mentioned, the skin is something most find finishing on other heat sources to be a better alternative after the smokin is done.

La Quinta, Have you tried the smoke with buttermilk on the chicken already?  I would think the buttermilk would block the smoke from the chicken so unless the smoked buttermilk does't get wiped off after the second soak, maybe it would be o.k.

Yeah. You pat the chicken dry before it goes into the smoker. I guess I assumed...so it's gets the acid from the buttermilk to tenderize and then takes on a light smoke. Then re submerge in the buttermilk...flour...and fry. It's really good and you get the best of both worlds...smoke and fry! (and now that Cisco has no trans fats) uh....you can feel better about it!!!! (Yeah right) WHO CARES! If youre gonna fry something....eat a salad the next day!!!
