just started, looking for a recipes for smoking trout

Have just started to use my smoker, did some chicken, wow, mmmmmmmm good. Anyone have recipes for trout. Would like to be able to do them and have no bones

I do not think the Bradley can remove bones yet.   :D ;D Just kidding.  Have not done fish yet, but there are many posts regarding fish.  Click on the search button and type fish.  You can also browse the receipe site by clicking the link at the bottom of this post.  Welcome to the forum.

Hi Oldasi;
Welcome to the forum.

For smoke trout you can't beat this brine that was posted by Boutch. His trout fillets where over 3 pounds each, so he used larger amounts of salt and longer brining times. If you have thinner fillets read further through the thread to see how I adjusted the recipe. Leave the skin on during smoking, it easily peels off just before serving.

Believe me you will not be disappointed. Brandy can be substituted for the cognac, but it is not quite as good. You don't have the get the most expensive cognac, but don't purchase the cheap stuff either. I personally like to use Courvoisier VS Cognac.

I second what Habs said, i have done trout lots of times now with Boutch's recipes, it really is awesome!, the fish melts in the mouth
