What cut of meat for Jerky?????

What is your fav cut of meat for makinn jerky??? I have to go with London Broil cut from 1/8 to 1/4 in strips across grain... how about everyone else????????

I use top sirloin & cut with the grain.

I'm not sure I understand your term "dry cut".

It is very lean and therefore makes great jerky. I'm sure any round roasts would work well, I know a number of members use it.

Isn't Jerky supposed to be kinda dry anyway?  Not sawdust dry, but dry.

Cheapest leanest round I can get.  Use to always get top round that never had a bit of fat on it so I never needed to trim.  The market raised their price so the last few times I got eye of round.  I have used London Broil in the past but the amount of work to cut away the fat is not worth the effort for a cheaper price.  Fat and Jerky do not go together as the fat will get rancid and I just don't like biting into it either.  So for me, the leaner the better as it translates to less work.

West Coast Kansan

Eye of the Round.  Nice pretty, uniform, jerky cookies.  Also easy to slice on slicer when very cold but not quite frozen (If your going to make a lot.  I have found if it does not look commercially processed my wife does not eat it...

The eye is easy to get real uniform results and near zero trim time.  ;D

That is what is so great about this site... everyone is so helpfull. as the saying goes there is more than one way to skin a cat but i always like to try new ways to a better end result. thanks to everyone for your imput and happy smoking!!!

I use top round, bottom round, or eye of round for my jerky, whichever happens to be cheapest at the time.

Indeed. Cheaper cuts works much better than the more expensive ones. Eye of the round is ok. Top sirloin will produce inferior jerky.

With eye round, do you slice it with or against the grain?

I always slice mine with the grain. I like my jerky the traditional way... tough.  :D
