First Smoke in the BDS

HI,

I've been hanging out here for a few weeks and now have some good content for my first post. I've been involved in smoking various meats for a number of years. I limited my smoking in the past because I hated "babysitting" the smoker all day; it cut into my naptime.  :) I found the BDS and though it would eliminate much of the "babysitting".

So for my first smoke I decided to do some pulled pork. I picked up a pack of two shoulders at Sam's with a total weight of 17 pounds. Rubbed the pork with the "The Renowned Mr. Brown" rub found here on the forum. Wrapped them up in Saran and popped them in the fridge for the night. Early the next day I fired up the smoker for the first time and ran through the seasoning process. After the seasoning was complete I popped the shoulders in with 4 hours of Hickory. The outside temp was about 35 F and the smoker struggled to hold 210, but it was close all day. I also learned about using the vent on top of the smoker to let moisture out. After 4 hours I cleaned out the water dish and let the shoulders continue to a IT of 185 for a total of about 14 hours in the smoker. I cleaned up the smoker by giving the inside parts a washing off and then a trip through the dishwasher, very easy and quick.

This weekend it's a 6 pound brisket flat from Sam's....MMMMMMM
