While obviously not a complete list, a few of the items I always keep on hand are:

Dry:
brown sugar
turbinado sugar
cayenne (I use 60K normally)
chili powder(s) (ancho, serrano, chipotle, etc..)
smoked paprika
cumin
rosemary
sage
nutmeg
cinnamon
granulated onion
granulated garlic
maple cure
tenderquick
insta-cure #1 (Prague Powder #1)
salt
coarse/kosher salt
canning/pickling salt
whole peppercorns (fresh ground pepper)

Wet:
worstershire
soy
terryaki
mustard
apple juice
whiskey and coke (for the cook)

obviously, there are others, but these are probably the most commonly used in my smoker pantry.
I just got my smoker, and this list is very helpful. I found the tenderquick online. I thought tenderquick and Prague powder wer about the same. Is one better for certain things?

Smoking Soon,
Praque and TQ are similar in function but different in chemical makeup and quantity used per pound of meat.  Both are for curing meat and their curing agent is Nitrite.
