here is the beast  after a 17 hour cook at 195 and an IT of 170



right out of the smoker



resting a few




a few slices...

can we say ...YUMMMMMMMMMMYYYYYYYYYYYYYY

well  worth the wait and time every one is gonna be happy .. almost lost it when I  transfered it to the cutting  table with a bbq folk started ripping  like pulled beef...
