Lookie what I got for Christmas

This is what my wife *cough cough* got me for Christmas[:D]

Now what does a meat tenderizer have to do with smokin'? I know that by using this after I cold smoke my ham the flavor will be greater as the liquid while have channels into the ham, and the smokin' time lessened. Have you ever wished you could get your marinade more evenly and deeper into the meat? For example: After using the tenderizer on a fine top butt sirlon steak, marinade it then in ginger/ vermouth/ teriyaki sauce--grill over direct oak wood. Sever with a sweet Blush wine.  Or what about that subtle flavor of your glaze/ sauce you would like to see through out your finished product?  Or let's say you are doing a type of pot roast with gravy. Just as the meat is done and you've made the gravy take the roast out and use the tenderizer on it. Add it back the pot with the gravy. In a short while the gravy flavor will marry (meld) with the inner-meat flavor, plus your roast will be juicier! So many uses for this tenderizer--only limited to your imagination.


14 inch Granton edge slicer. I have one but I made the mistake of letting someone borrow it and he ruined the air pockets in it when he decided to grind/ sharpen it  [:(]


Giesser carving fork. Did not really need another one but what the heck... a new knive needs a new fork~~ [:D]


14 inch diamond sharpening steel. The same "friend" lost mine. This steel will last you a full lifetime.

Do you think the tenderizer would work on a raw brisket?  Just poke all those little holes in it then rub as usual.  If it works the rub should melt down through and into the meat.  Maybe even do that then the next day after the fridge rest rub again and rest for another day.

That TENDERIZER is 48 BLADE unit. They come in smaller blade counts as well. I've used these in resturants years ago. They work pretty good. And yes they are used generally on raw food only. If fact you can over work a piece of meat almost into a stringy mush if you get crazy with it!

If your rub will go liquid then I would suggest using the tenderizer on the meat after the rub turn liquid. This would help in getting the rub into the meat easlier.  Either way it will work.

One warning... it is better to go slow with it the first few times until you figure out how many holes per sqaure inch works without overly cutting up the meat.

Between your garden, smokers and q's, you are on the verge of opening a restaurant Olds!  Those are some mighty fine utensils - especially that knife!

What did Sky get?  Jets for his cycle would be nice, you know, to assist in the takeoff! LOL[:D]

NO NO NO... What he needs are new air-brakes~~! I know you think I'm kidding, but I'm not! A few times per month when we get within a couple of blocks from the house Susan will come out. When he sees her it is the pettle to the metal. She always has to jump out of the way when he gets to her as his standard braking system is not enough! One time he knocked her on her butt, because as he gets to her he leaps up into the air! WHAM!!!! Talk about something funny is an airborn dog in a wheelchair. .... Now you know why I said he needs air-breaks.

Ya the Granton edge slicer is nice. When I'm done with it you can dry-shave the hair on your arms off with it. I have a triple grit stone and then I finish up with a light steeling.

man that sure made me think....

using his forward momentum could be an advantage of using brakes like on a bycicle, just use a weaker spring .

useing a style like my truck has when I pull my boat:  use a small brake cylendar from a car and using hydralics ( with his forward momentum) to compress plunger instead of spring on bycycle brake[8D]
