Chicken fried steak

Felt like some chicken fried steak for dinner last night.  Seasoned and resting while the smoker heats up.



After 1 hour of smoke



Its time for a soak....Buttermilk, more seasoning, black pepper and a splash of hot sauce for 30 minutes



Double dipped in seasoned flour and off to the frying pan.



Cook till just golden brown on both sides, about 2 minutes per, then drain on brown paper sack.



Plated up with mash taters, biscuits and cream gravy!

That looks AMAZING! 

To ask a silly question, what cut of meat is chicken fried steak made of usually?  Is that round steak/ flank steak/ something else?  I've got to try this, but don't want to use the wrong thing.

Meat,

Tenderized bottom round, and I think next time I do this I'll only go with 40 minutes of smoke befor the fry!
Still it was some yummy stuff, with the smoke infused into it!  Good luck!

Love the chicken fry Westexas.  My dad was the king of chicken fried steak and I have been on the eternal quest for the perfect chicken fry for many years now.  Never have found the one that would top dad's but by golly I know dad would have approved of the addition of some smoked flavor!  I have always been a top round or beef chuck guy but your post may sway me toward trying that bottom round.  The wife was in awe when she saw the bicuits plus mashed potatoes, cardiac shock for this guy but in my healthier days would have attacked with reckless abandon.  To splurge from time to time go with the chicken fry and some hashbrowns with mushroom gravy.  Thanks for the foodporn pictures!

Thank you for a lovely recipe! 

I could only find round tenderized round steak in the freezer, so I tried it with that.  2 pucks of mesquite, then into the buttermilk, seasoned flour, frying pan.  YUM!  everyone loved it!

Not being in Texas anymore, I had to cook my own CFS for years.  Nashville cooks/chefs just don't get it!  WTS, I must say that I have never heard of doing a smoked CFS.  Gotta try that real soon.  BTW, IMO don't got enough scrapings and black pepper in that gravy - too purdy and white - gotta get it dirty!
