When beef roasts or pork butts are on sale I usually buy ten or fifteen pounds at a time. I usually grind most for sausage or ground beef. The results are very lean. In fact I wish I could get some fat to grind and mix in with the lean meat but apparently in FL its against the law to sell the trimmings. I am thinking about buying some pork belly to grind and add to my lean pork. Any suggestions?

might try a local butcher and buy a whole untrimmed butt, loin , surloin .. or what  ever you  like... I also have found out that sams club sells larger cuts of  meat packaged and they  have some fat on it .. if you  have a sams near you  check them out

Interesting. I don't seem to have a problem purchasing trimmings. I live in Florida. However, it has been a while since I did and I will check today when I go to the store.

If you like Prime Rib, see if you can purchase one that is "Lip-On."
This is what a lip on looks like. You can see the fatty area behind the eye with the lip meat.




When I was in the resturant business I use to clean the eye and use the lip and grind it up with sirlon. Now that is a hamburger!

I will try a "Butcher" shop and Sam's. The Mkt Mgr at Publix is who told me it is against the law.

I just check with our local Sweet Bay and they will not sell me the fat they trim off of the Prime Ribs... they will give it to me free! All they ask is a two day notice~~!

I have found that Publix is at times is not only the most expensive place to shop but are funny to deal with. I have done comparison shopping on brand name items and I've found Publix at least 10 to 20 % more than the other super markets here.

Last year, now that I think about it, I was purchasing "trimmings" and fat from Winn Dixie before they closed here.

Perhaps you might want to check out your local Sweet Bay.  BTW the last two Prime Ribs I got from them were much better than the local butcher here. I order a BIG eye rib and two days later they have it for me.

I think, perhaps,  your local Publix meat manager is just spoofing ya... maybe it is just his policy. I'm sure you have met in your lifetime some what-to-be-wish-I-was-important-person~~! It sounds like the Publix's meat manager is a want to be little man who will do anything to feel important at someone's else expense.

I will try them. Used to always use Sweetbay and now a Publix is about 7 or 8 miles closer so we just got used to going there.
