Black Friday Morning Snack Stix

I have had some curry flavor mix in the fridge for a few days now. This black friday morning i stuffed into 19mm collagen casings. Going to hang em @130* for 1.5 hours then smoke @150* with 9 pucks of hickory. After smoke 2 hours of no smoke @150* then bump up to 170* with 6 more pucks being careful not to fat out the stix  ;D

This is a 2.5 lbs. 2 lbs of beef .5 pork fat.

When your ready to stuff be sure to remix the meat with your hands  ;D  I forgot to on the first stick  :o

Nepas, Thats not fair I have ten pounds if Keilbasa in the BDS as I type and it isn't done yet. Yours looks great. Was cleaning up and washing dishes when I noticed that while making mine this morning. I forgot to add the marjoram in the seasoning mix. Hope it comes out the same. We shall see. Again yours look awesome.
