Prime Rib -- Olds' Second Way To Roast Beef

This is not a smokin' recipe. However, it is quite simple.

STEP ONE:

Season outside to your liking. Using a grill sear your rib. (We use a radiant gas grill. Any type of grill will work.)



STEP TWO:

Place in preheated oven (325F.) Add 16 ounces of your favorite beef stock. (Beef is place on grillin' rack -- see image.) Once meat temp is 120 - 125F turn off oven and cover beef with foil. Place back into the oven -- sort of like a FTC.  When it temp reads 135 - 140F remove and enjoy. The drippin' and stock you added make for a great Au Jus or gravy base.



Simple and the grill adds a nice subtle flavoring.

I just knew I should have saved a chunk of that ribeye and not cut the whole thing into steaks. This looks good Olds.
