King Arthur Flour

Smoking Duck

I got a wild hair about making some pizza tomorrow as I watch the Steelers kick Baltimore's butt at 4:15.  I saw Deb's posting about pizza and decided to make my own dough and my own sauce.  Fortunately, I have all the ingredients except I needed some flour, so I trudged to the store and looked for some flour.  I remember reading about King Arthur but they really didn't have any made specifically for pizza at the grocery store.  They did have the all purpose flour that I picked up.  Will this work okay or should I have found something else?  I've even got some smoked mozzarella and pepperoni for on top of it!

Duck,

That will work fine.  King Arthur probably has the highest protein content of the all purpose flour.  Bread flour would have a higher protein count but the all purpose will be fine. The higher the protein content the chewier the pizza will be.  If you are using the recipe that I linked to and it calls for King Arthur Sir Lancelot (KASL) then you will want to cut down on the water.  The KASL absorbs more water than the KAAP does.   


Damn,  I meant to buy mozzarella to smoke...... I guess that means another trip to the store.

Will do, Deb.  Both doughs have been pounded once.........they sure are nice and light!  Got the homemade sauce simmering on the stove right now....got about 2 more hours on that.  Also, on top of the smoked mozzarella, smoked pepperoni, I plan on adding fresh minced garlic, canadian bacon, mushrooms and black olives.  I made the first pizza dough plain.  The second I added garlic powder to.

I do need to come clean.  I mixed the dough in the food processor and the first one came out perfectly.  After a minute, it was in a nice ball.  On the second one, it needed a little more water.  I tried to help it out by inserting a scraper to help mix it better.  Don't ever do that!  It destroyed my scraper and came to a grinding halt!  At least I'm not as big a nit-wit as I thought and used my hands  ;D  I had bits and pieces of black plastic all in the dough!  So, my second pizza dough is actually my third!   :o ;D

The stand mixer dough hook doesn't like a wooden spoon in it's path either.

Your pizzas sound awesome. 

I was going to do the roast tonight but the kid has proposed a movie night with junk food for dinner - it's  not often he wants to spend time with the parents so I am changing the menu - he wants pizza, subs, onion rings,mozzarella sticks & popcorn.  I think he has forgotten but I have some whoopie pies in the freezer -so dessert is easy.  Double feature - Batman Begins & the Dark Knight
