Our company Christmas party was canceled due to the economy but we will have a pot luck next week at work. I think that the pot luck will have better food then a catered event. I will be making a case of baby back ribs that I bought at Sam's Club. When you buy a case you get a discount. Only $2.85 per pound, A total of 44.5 pounds. I will start them at 10:00 PM and it is 8 degrees outside. It should be no problem because I have a PID and an extra heater. The joys of a souped up Bradley are many! I will sleep good tonight.

Hey Car54, In these times be glad there is still a company! I have seen mine go from ultra expensive Bay Cruise Dinners to small catereted events to now probably closing their doors if things do not improve.
Just gotta roll with it. That's a lot of ribs, make sure we get some pics!   ;D

Wow, Brad!  That's a gaggle of ribs!  Love to see some pics of all those racks!

By careful measuring and cutting, I got 2 cryovac packs of ribs (6 racks of St. Louis) into my OBS on eight racks.
