Thermocouple placement in smoker cabinet

Lot of information on the PID unit and wiring. 

Can a hole be drilled so the thermocouple probe can be inserted?  Can the thermocouple Transition (between probe and wire/connector) withstand the temps in the cabinet?

Not knowing what kind of PID and thermocouple you are talking about it is difficult to answer your question.  If it is an Auber then yes, it is a 5 minute job to drill a hole in the back of the cabinet and mount the thermocouple.  Did one recently myself.

Yes, I have ordered an Auber Pid, but not the thermocouple.  Most likely will get a thermocouple from Omega Engineering. Now that I know I can go through the back, I know better what to order.

You can get a purpose built, thru the cabinet thermocouple from Auber.  That's what I did.
