Cured Chops with Jalapeno-Cornbread Stuffing

I did a quick dry cure on some pork chops using a mix of 1TBs tenderquick and 1 tsp of turbinado sugar PER pound of meat.
After rubbing the cure on the chops, I let them cure for about 2 hours, then rinsed.

The cured chops...




I made my stuffing using some jalapeno cornbread. The cornbread already contains jalapenos, whole corn and onions, so I added a bit of melted butter, chicken broth and some thyme.





The stuffed cured chops...seasoned with a bit of cracked black pepper...




I smoked them using hickory....




The jalapeno cornbread stuffed chops, turnip greens, salad and fried green tomatoes...

I smoked these at about 275...they didn't take long, maybe 2 1/2 hrs. I will check my notes.
