Fattys And Egg Stuffed Fattys

Here i am making some fattys and the egg stuffed fattys.

2lbs of GB



Home made fatty mix, cure and 1/3 cup of cold distiled water. Mix the dry with the water and mix into meat.


Here I made 2 regular fatys and 4 egg stuffed fattys  ;D


Going in the smoke @180 with hickory.

Those look fantastic Nepas! God a couple dozen eggs to hard boil today. I want to pickle a dozen. Think I will try an egg stuffed fatty or three or four if we get a long enough break from the rain! I think we're actually supposed to get some sunshine this weekend...

Oh...man....those look so good...REALLY GOOD...DANG NePas...  :) Haven't seen a regular fatty since you were out here...but now the egg ones? Dude...you are a rock star!!!  :D  :D  :D

I cut one open and wife and I ate it all with some smoked swiss and crackers  ;D

Those baby's are going into my regular rotation! I do have to separate the next batch into some not so spicy for the spouse. Everyone else loved them! I was going to try the more traditional Scottish Egg routine next time with a egg and flour batter dipped in breadcrumbs and into the Big Easy after the hickory smoke. I am thinking about crushing some garlic Parmesan croutons and rolling in that. This is fun stuff!

Smokin.....do it dude...Scotch eggs are brilliant!!! No oil needed!!! Great!!!

NePas....I mean Rock Star Dude...a delicious looking thing...with crackers and the wife...you need and Old Millwakee (I bet I spelled that wrong)....doesn't get any better than that!!!  ;D  ;D  ;D

LQ, you have given me the inspiration to make it my next project. When I get my hi-temp cheese order in I will report. Lot's of possibilities, bacon, pepperoni. Anyone ever make there own breadcrumbs?
I do not have a dehydrator yet, but am saving for one.

Those look awesome Nepas! I think I will try a few of those this week! Maybe some ground sausage and a little cheese....  ::)

Btw, could you tell me what that extra grate is on your rack?

Thats a high temp food safe smoking screen. You can get em at Cabelas or Bryan at Yard and Pool sells the a different kind which i think is better, Its the screen on the first pic of the fattys before i smoked em.

SS...you got an oven...you got bread...you got breadcrumbs!!! Herb them up however you wish...food process those babies...or...plastic bag and rolling pin/frying pan is good too...smash em up as fine or coarse as you wish!!! Easy stuff...
