I know it is a little late for you this time, but you may be able to use this information in the future. There is another test for doness in pork butts, besides temperature. Take a fork insert it into the meat and twist. If it pulls apart easily then it is done, not matter what your temperature may display. I use both methods, temperature along with the fork test, because I like to pull mine at 175°F.
